Ingredients:

• 3/4 cup uncooked Quinoa
• 4 pieces salmon
• 1/3 cup soy sauce or coconut aminos
• 3 tablespoons vinegar
• 3 tablespoons raw cane sugar
• 3 cloves garlic, minced
• 1 tablespoon minced ginger
• 1/4 teaspoon crushed red pepper flakes, plus additional for serving
• 2 tablespoons olive oil
• 24 ounces mixed veggies (peas, carrots and red bell pepper)
• 4 scallions, sliced, with white/light green parts and dark green parts divided

Directions:

Mix all the ingredients together in an electric pressure cooker and that is it let it cook until ready! Enjoy your one casserole dish.
