Pork chops with pear and panela

Pork chops are a cross section of tenderloin that includes the rib bone. Grilled or baked, the chops are delicious with fruit and honey-based sauces.

8 pork chops
2 firm pears
1 tablespoon butter
4 tablespoons grated panela
1 tablespoon of Dijon mustard
2 tablespoons soy sauce
3 tablespoons olive oil
Salt and pepper to taste


  1. Mix mustard, soy sauce, salt and pepper. Season the chops with the previous mixture.
  2. Cut the pears into four, remove the heart and cut them. In a pan melt the butter and brown the pears together with the panela. Cook for 10 minutes.
  3. Apart, brown the chops in the olive oil for 5 minutes on each side. Add the pears and let cook 5 more minutes over low heat. Rectify the salt point and serve.
